Okay, we’re getting technical for a moment, hang with us! Gluten is a combination of proteins typically found in wheat. However, with wheat gluten being the most common, other substances like barley and rye are sometimes overlooked. Regardless of where you find it, there are two primary proteins found in gluten: gliadin and glutenin.
Think of gliadin like glue. When you compare the two and imagine digesting the latter, it’s easy to understand why the protein is a primary factor of negative reactions. So, why would someone use this ingredient when cooking? Both of these proteins form together to create a binding substance used in a lot of baked goods – like bread for instance. Gluten is also present in many cereals, pastas, and (sorry to be a spoiler) beer.
