Flavor
Black Angus cattle are known for their rich, beefy flavor. This flavor is due to the higher amount of intramuscular fat (marbling) in their meat. Marbling is what gives meat its flavor and tenderness. A higher fat content distributed throughout the beef makes the beef flavorful and helps prevent it from drying out when cooked.
Tenderness
Black Angus beef is also known for its tenderness. The increased tenderness is due to the cattle’s higher percentage of collagen in their meat. Collagen is a protein that breaks down during cooking, contributing to the meat’s tenderness.
Juiciness
Finally, Black Angus beef is also very juicy. That is because it has a higher amount of water in its meat, which helps to keep it moist and juicy. As the beef cooks, it releases the water, which is why overcooked meat is dry. However, meat with a higher water content will still be juicy, even if it is cooked to be well-done.
Cooking Tips
Although you can always get great burgers at Nadeau’s restaurants, you can also try your hand at cooking them. Here are some tips for cooking delicious burgers at home:
- Choose a ground beef that is at least 80% lean. Remember, fat is flavor, but too much fat will result in a greasy burger.
- Season the burgers simply with salt, pepper, and a little garlic powder.
- Cook the burgers over medium heat until they reach an internal temperature of 135º F.
- Let the burgers rest for a few minutes before serving. Letting them rest prevents the burgers from falling apart when you eat them.
